Grapes: 60-70% Pinot Noir, 25% or so Cabernet and maybe 5% Merlot depending on the vintage
This is a cuvée Stein has made since the late 1990s when the vines were old enough to produce grapes and they achieved proper ripeness. This is his “light red” entry, a Stein Nouveau of sorts. Made from a cuvee similar to the rosé (60-70% Pinot Noir, 25% or so Cabernet and maybe 5% Merlot depending on the vintage), from a picking after the rose but before the Waechter picking.
