Sylvain Pataille is perhaps secretly one of the most important figures in Burgundy today. Beyond being a leader in organic and biodynamic viticulture, he is also a consulting oenologist for some of the most famed domaines in the region. Sylvain’s wines are extraordinary examples of what top farming, matched with one of the brightest oenological minds, can produce. They are wines of incredible balance, seamless textures, and clearly defined minerality that can only come from one of the greats of Burgundy.
2/3 planted in the early 2000s, 1/3 planted in the mid-1950's. In Bas des Longeroies; Moderate slope facing southeast. Well-draining, gravelly soils. 275-meters elevation. Organic (certified Ecocert), biodynamic methods. 100% whole-cluster pressing, indigenous yeast fermentation, gentle extraction. Aged for 18 months in barrel (15% new), low sulfur additions only at bottling.
