Made by Maestro Tequilero Jaime Villalobos Sauza, a descendant of the Sauza family, this earthy, lowland Tequila is made with just three ingredients: agave, water, and ambient wild yeast. Each batch undergoes spontaneous fermentation, allowing for subtle variations in flavor. Currently, the focus is on pure unaged tequila, creating a classic modern blanco at 40% ABV.
The slow baking process enhances aromatic notes and flavor concentration, while ambient fermentation results in a premium tequila with a robust body and distinctive aromas unique to the distillery's terroir.
