Grape: 100% Chardonnay
Domaine Aurore Bachelet is located in Santenay, south of the Côte de Beaune in Burgundy . Aurore produces the two emblematic grape varieties of Burgundy: Pinot Noir and Chardonnay. For each vintage, she strives to respect the Burgundian identity with vinification that is as non-interventionist as possible.
This 2023 vintage is made from Chardonnay whose vine is about 35 years old, grown on a clay-limestone terroir. After the manual harvest, the harvest is put into direct pressing. Fermentation takes place in oak barrels. The wine is aged for 12 months in oak barrels , then 5 months in stainless steel vats .
