Alexander Götze and Christoph Wolber founded Wasenhaus after years working with top Burgundy domaines, bringing home a philosophy of precision, restraint, and respect for terroir. From their base in Baden, they craft some of Germany’s most elegant, mineral-driven wines. Their Weissburgunder 2023 is a quiet triumph — graceful, textured, and full of energy.
The fruit is sourced from limestone and loess soils around Ehrenkirchen and Bellen. Fermentation occurs spontaneously with native yeasts in a mix of large wooden barrels and old Burgundy pièces, followed by aging on fine lees for ten months. There’s no new oak, no fining, no filtration — just pure Pinot Blanc expression.
Aromas of white peach, lemon blossom, and almond lead into subtle hints of honeycomb and crushed stone. The palate is sleek and balanced, showing crisp orchard fruit, delicate texture, and a fine mineral line that extends through a clean, saline finish. This is a versatile, food-friendly white — perfect with grilled fish, roast vegetables, or a plate of cheeses and charcuterie.
