Grapes: 100% Chardonnay
Frédéric Savart is one of Champagne’s most dynamic grower-producers, farming just a few hectares of vines in Écueil on the Montagne de Reims. His Blanc de Blancs brings together fruit from his home village and the chalky Premier Cru slopes of Trépail, creating a wine that marries precision with depth.
Fermentation is with native yeasts, followed by élevage in a mix of stainless steel and neutral oak. The wine rests on its lees before disgorgement with a very low dosage, keeping the profile taut, mineral, and expressive.
Aromas of citrus blossom, green apple, and pear lead into hints of almond and brioche. The palate is crisp and chalk-driven, with lemon zest, white peach, and a saline edge carried on a fine mousse. The finish is long, mouthwatering, and refined. Perfect as an aperitif or alongside oysters, sushi, or delicately prepared fish dishes.
