As a rising star in a new generation of grower-producers, Pauline works with old vines rooted deep in chalk soils, bringing precision and texture to every cuvée. The 'Vieilles Vignes' release is her flagship — a study in balance, patience, and place.
Fermented with native yeasts and aged in neutral oak before resting sur lie for nearly four years, the wine bridges traditional craftsmanship with modern finesse. There’s minimal dosage, allowing the purity of the fruit and the mineral energy of Ludes’ chalky terroir to shine. Each bottle reflects Pauline’s meticulous touch — expressive yet understated.
The nose opens with white flowers, citrus oil, and toasted hazelnut, followed by hints of brioche and chalk. The palate is focused and layered, combining ripe orchard fruit with saline drive and fine, persistent bubbles. The finish lingers with lift and quiet complexity — refined yet full of life. Serve as an apéritif or alongside oysters, roast poultry, or aged Comté.
