Grapes: 100% Chardonnay
The Seven Springs Chardonnay comes from a high elevation block with excellent soil drainage and exposure to the cooling influence of the Van Duzer Corridor. The wine underwent whole cluster pressing before being racked to once-used french barriques and Stockinger puncheons for fermentation. The wine completed 6 months élevage in barrel and 1 month in tank prior to bottling.
The wines shows with lots of crunchy white peach, Granny Smith apple, salty chalk and almond aromas. Generous and expansive with a core of tree fruit and bracing acidity, well-timed lees influence adds to an immensely textural wine.
