Grapes: 100% Chardonnay
From the foothills of the Black Forest, Wasenhaus has become a cult name in contemporary German winemaking. Founded by Alexander Götze and Christoph Wolber after years in Burgundy, the domaine has earned a reputation for producing wines of striking precision and quiet beauty. Their Chardonnay 2023 is a pure, mineral expression — more Côte de Beaune than Baden in spirit.
The fruit comes from limestone-rich parcels near Ehrenkirchen, farmed organically and picked early to retain tension. Fermentation is spontaneous in old Burgundian barrels, followed by 10 months of aging on fine lees. There’s no new oak, no fining or filtration — just texture, balance, and clarity.
On the nose, the wine shows citrus oil, green apple, and crushed stone, with a touch of hazelnut and lemon curd. The palate is taut and elegant, balancing ripe orchard fruit with chalky minerality and a saline edge. The finish is long, linear, and quietly luxurious. Perfect with grilled white fish, roast chicken, or soft cheeses — or simply served cool as a study in understatement.
