From the VallƩe de la Marne, Christophe Mignon works with a biodynamic, low-intervention approach, focusing on Pinot Meunier as a true expression of site rather than a supporting grape. His wines lean toward texture, softness, and a more contemplative style of Champagne.
āADN de Foudreā Meunier is fermented and aged in large oak foudres, bringing gentle structure and integration without overt oak influence. Extended lees aging builds depth and complexity, while low dosage keeps the wine balanced and true to its origin.
Textural and expressive, it shows notes of ripe apple, pear, and subtle stone fruit, with hints of brioche and soft spice. The palate is rounded yet fresh, with a fine mousse and a quietly mineral finish. A natural pairing for roast poultry, richer seafood, or simply enjoyed on its own.
