Grapes: Predominantly Chardonnay with a touch of Pinot Noir

Adrien Dhondt, together with his sister Alice, has brought their family domaine to the forefront of the grower Champagne movement. Based in Flavigny in the Côte des Blancs, the Dhondt-Grellet wines are known for their energy, precision, and terroir expression. Roc Solare comes from a sunlit, flinty site that produces a Champagne of both depth and lift.

The 2021 vintage was fermented with indigenous yeasts and aged on lees in a mix of stainless steel and neutral oak barrels. A portion of reserve wine is included for added complexity, while a very low dosage keeps the focus firmly on minerality and purity.

Aromas of lemon zest, green apple, and white flowers open into subtle notes of toasted hazelnut and sourdough. The palate is crisp yet textural, showing citrus and orchard fruit layered over chalk and saline drive. The finish is long, mouthwatering, and elegant. A Champagne that shines with oysters and shellfish, or simply savored on its own.
