There are few names in Champagne more promising than Adrien Dhondt, and his “Chétillons de Haut” is a vivid articulation of what the Grand Cru terroirs of Le Mesnil-sur-Oger can whisper. Drawn from mid-slope vines with deeper soils known for their generous texture, this Blanc de Blancs is built with precision and restraint.

Vinified in barrel, aged on the lees for around 8 months, and released Extra Brut, it delivers purity and minerality without sacrificing inner richness. The low dosage allows the chalky soils and vineyard character to shine through.

The 2021 comes from the upper section of the famous Les Chétillons vineyard, a site long associated with some of Champagne's most age-worthy Chardonnay. It's a particularly compelling expression of a cooler vintage, with the natural concentration of the vineyard balanced by an almost electric freshness. A restrained Extra Brut dosage keeps the wine beautifully focused, allowing the character of the site to take center stage.

Lemon zest, green apple and white peach are joined by delicate florals, toasted almond and a subtle hint of spice. There's impressive depth beneath the wine's youthful energy, with a fine, creamy mousse and a distinctly chalky quality that carries through a long, mouthwatering finish. Serious Champagne that deserves a little time in the glass, and potentially several years in the cellar. Wonderful with oysters, scallops, lobster or roast turbot.
