From the VallƩe de la Marne, Christophe Mignon takes a thoughtful, low-intervention approach, working organically and biodynamically to produce Champagnes that emphasize purity and energy. While best known for Meunier, his Chardonnay bottlings offer a more linear, mineral-driven expression of his style.
āADN de Foudreā is fermented and aged in large oak foudres, a choice that brings gentle texture and integration without overt oak influence. Extended time on the lees builds depth, while low dosage keeps the wine focused and precise.
Clean and quietly complex, it shows notes of citrus zest, green apple, and white flowers, with a subtle nutty and mineral edge. The palate is crisp yet textured, with a fine mousse and a long, chalky finish. A natural pairing for oysters, shellfish, or simply enjoyed as a refined aperitif.
