Grapes: 100% Vermentino
Clos Sainte Magdeleine occupies one of Provence’s most dramatic settings, with the Sack family’s vineyards overlooking the Mediterranean around Cassis and Cap Canaille (seriously, Google this vineyard). Jonathan Sack represents the fourth generation here, and while the domaine is best known for the traditional white blends of Cassis (one of our all time favorites), Baume Noire shows a more experimental side of the estate: a tiny parcel devoted entirely to Vermentino.
The vines were planted in 2013–14 on limestone terraces, using plant material selected from Corsica. After a short cold maceration, the 2022 fermented naturally in sandstone amphorae and remained there on its fine lees until bottling. It sees no malolactic fermentation, helping retain the variety’s natural brightness.
This is Vermentino with a distinctly Mediterranean personality: citrus and pear alongside wild herbs, delicate florals and a subtle salty edge. There’s texture here, but also plenty of energy, with the limestone soils and amphora élevage giving the wine a clean, stony feel through the finish. A brilliant seafood bottle; oysters would be hard to beat, but grilled fish, crudo or a plate of garlicky prawns would be equally at home.
