This is, for sure, a gin specialty. Inspired by Covalle's lifelong love of the scent of tomatoes on the vine, they pomace, centrifuge, and macerate their way to a tomato-water gin that brings a fresh, herbaceous twist to cocktails. Especially good in a martini.
